Dallas coffee roaster brews new shop with drinks and snacks in Oak Cliff

longtime Dallas coffee roaster now has its own shop: Slow and Steady, who’ve been roasting beans for local coffee shops, have opened their own spot in North Oak Cliff, in the heart of the Elmwood neighborhood at 1805 S. Edgefield St., where they’re serving brewed coffee, espresso drinks like cappuccino, honey vanilla latte and cortado, plus chai, teas, and smoothies.
Slow and Steady was founded by Germán Sierra, a Kiest Park resident who developed a love for coffee on trips to Oregon, when he was working in finance.
“It started as a hobby, buying equipment for home, and little by little started growing more and more into a stronger passion,” he says.
He transformed that passion into a wholesale business in 2016, roasting beans for other Oak Cliff businesses including Wild Detectives and CocoAndré Chocolatier, as well as pop ups at several coffee shops, including now neighbor Peaberry Coffee. For food, he’s partnered with local vendors such as Dillon Dishes Dallas, a catering business from chef Dillon Palmer Webb, who created dishes for the shop that include:

  • breakfast biscuit sandwiches with sausage, egg, cheese gravy, and strawberry jam
  • superfood parfait with overnight oats, chia seeds, dark berry puree, and maple chia granola
  • Pastries such as strawberry pop tarts and coffee cake
 

Sierra had his eyes on Edgefield Street for a while, and found the perfect spot in an abandoned house that was zoned for business, but required major renovations. He spent a year transforming it into a charming, welcoming space, with a few seating spots, and a back patio that will open in a couple of months.
The shop also features a retail area, with home equipment for purchase by Baratza, Fellow and Chemex, since one of their goals is helping people make better coffee at home.
Hours are daytime only for now: Monday-Friday 6:30 am-4 pm, and Saturday 7 am-3 pm. These will likely be extended once the shop is fully staffed.
